Red Onion Tomato and Mozzarella Quesadillas with Red Slaw

Quesadillas with Red Slaw sounds good right?

This has got to be the simplest recipe ever and one I share with everyone.

Every busy family needs to know how to make quesadillas. Quesadillas are as speedy quick, super tasty tea and  all my family lovely them. There is only one problem with quesadillas I find and is that they can look a bit  boring!

The origins of quesadillas lie central and southern regions of Mexico. traditionally a quesadilla is a tortilla,warmed to soften it enough to be folded in half, and then filled. They are typically filled with cheese.

 

Quesadillas with Red Slaw

We like to use Mozzarella because when it melts it is lovely and ‘stretchy’ and holds our tortillas together well.

We like to jazz our quesadillas up with gorgeous salad accompaniments that add to the taste as well as the visual appeal of the dish. After all we eat with our eyes too!

 

Ingredients for Quesadillas with Red Slaw

4 tortillas

100g Mozarella

6 cherry tomatoes (sliced)

1 large red onion

I use a non stick frying pan but if you don’t have use olive oil

Baxters Red Slaw Deli Topper

Radish

Homuus (a dollop)

Sweet corn 1 cob per person

Cucumber

Method for Quesadillas with Red Slaw

  1. Heat your pan for a few minutes on medium heat then lay tortilla on the bottom
  2. Add grated cheese, tomatoes and onions leave a 1/2 centimetre edge around the rim.
  3. Place the other tortilla on top.
  4. Heat on a medium heat for 3-4  minutes then using a fish slice flip it over and cook the other side.
  5. Serve with the salad, red slaw and corn and enjoy!

 

Why we ♥ this:

I love to make this because it is so simple quick and easy to make and the entire family love it. It can be served cold in packed lunch boxes too  and makes a really nice change from sandwiches . It is the perfect picnic food.
