Slimming World Quorn Casserole
Equipment
- Frying pan, saucepan
Ingredients
- 1/2 tub no fat cream cheese with sweet chilli or violife
- selection of veg (any you choose!)
- Spashes of Almond milk
- 1 bag vegan or regular quorn pieces
Instructions
- Instructions for Slimming World Quorn CasseroleFry off the Quorn pieces (straight from the freezer) in a little hot oil top brown it off. ( use fry light to keep it SW friendly)
- Whilst this bit is going on, par boil the veg / fry the veg in a little boiling water until just soft.
- Stir the cream cheese and a touch of (almond) milk into the Quorn and allow it to melt into a yummy gooey sauce (that’s my Nigella moment!)
- Stir in the cooked vegetables and cover and simmer for about 20 minutes! ( We add salt, pepper and herbs at this point too)
- We served ours tonight with rice but creamy mashed potatoes, but jacket spuds, or pasta just as well!
- (Sweet peppers, mushrooms and red onions, carrots, green beans pretty much any veg will work!)

Ingredients for Slimming World Quorn casserole
- A packet of Quorn chicken style pieces
- Half a tub of no-fat cream cheese with sweet chilli (we tend to use supermarket own brand as it’s cheaper!) You can add more cheese if you prefer it saucier.
- Vegetables – again use your family favourites, we always have something very colourful just brighten up a dark winter evening or failing that – whatever is left in the fridge from last nights dinner! For this version we have green beans and carrots
- Seasoning of your choice
- Few splashes of almond milk

Make a Slimming World Vegan Quorn Casserole
You can make this recipe vegan by using no dairy Violife creamy cheese and vegan Quorn chunks. You might want to add chilli flakes into your violife to give more taste.
