Oh I do love crispy quorn tacos. It’s like a giant tasty crisp with scrumptious filling.
Tacos make the perfect street food as they fit perfectly in your hand, Many years ago I lived for a short while in Texas. Fast food meant tacos , breakfast meant tacos, home cooking meant tacos. we ate them all the time and I never grew tired of them,
As a family of vegetarians quorn is a staple in our diet and quorn tacos are a much loved family favourite.
Here is my very simple and totally yummy quorn taco recipe:
Ingredients for Quorn Tacos with Spicy Slaw (makes 6 tacos)
For the sauce
250g quorn chicken pieces
1 1/’2 cans of chopped tomatoes or qr 5 well chopped and fried red and green tomatoes
1 large red onion
2 tbsp olive oil
1 tsp cumin
1 tsp chilli powder
salt and pepper to taste
For the topping
shredded lettuce
1 jar Baxters spicy slaw deli topper
8 crispy tacos
3 limes halved
For the salad
A handful of baby leaf spinach
a handful of walnuts
dash of lemon juice
Method for Quorn Tacos with Spicy Slaw
- Fry the quorn and diced onion in olive oil over a medium heat for about 10 mins turning frequently
- Add the tomatoes, spices and seasoning and cook for a further 10 mins
- Spoon the quorn mixture into the tacos about 2/3 way up
- Top with shredded lettuce and spicy slaw
- Pop some lime halves on the serving plate so people can help themselves
- Serve with a little bowl of feta and walnut salad

Children of course love an excuse not to use a knife and fork so tacos have always been a hit in our house too.
The filling can be made en masse and half frozen for another day when you need a speedy tea.
