White Chocolate Cookies

This lovely recipe is from Nikki at StressyMummy. I have to say, wrapped in some cellophane with a piece of red ribbon, these are a lovely homemade Christmas gift idea. I love white and red and chocolate and indulgence at Christmas – they all go together so well! Lovely for the kids to take part in gift making too.  Thanks for sharing Nikki!

♥ White Chocolate Cookie Recipe ♥

Ingredients

125g soft brown sugar (light or dark depending how rich you want them)
100g caster sugar
150g softened butter
300g self raising flour
1 egg and 1 egg yolk
1 teaspoon vanilla essence
300g white chocolate drops

Method

Heat the oven to 170 degrees

I gently heat the butter in a saucepan and then after letting it cool, mix it in a bowl with the sugar.

Mix in the eggs and the vanilla essence and when you are happy, add the flour.

Finally add the white chocolate drops and give the mixture a really good mix.

Use a spoon or an ice-cream scoop to place balls of mixture onto baking sheets lined with grease proof paper. The size of the balls depends on how big you want the finished result.

Cook for roughly 10-12 minutes, don’t over cook as they loose the lovely gooey middle.

I use a lot of chocolate as I find that it does make them a bit more indulgent so you could try using less and of course you can use milk chocolate drops if you prefer.
