Broccoli and potato soup
Use whatever measure you feel suit your tastebuds - this is a free flowing and highly adaptable soup!
- vegetable stock
- sharp cheese
- salt and pepper
Start by boiling some potatoes in stock, and while that’s happening, roast some broccoli, cut into chunks, on a baking tray.
Once done, add it to the stock and blitz it with a stick blender.
Add in a cup of extra sharp cheese, some salt and pepper and that’s it
